Green Goddess Salad

A salad like a springtime walk: crisp, green, and full of flavor. This Green Goddess Salad combines fresh vegetables with an intense, creamy dressing made of herbs, nuts, and lime. Perfect as a light lunch or as a highlight on the buffet.
Preparation
Prepare salad:
Shred or slice the cabbage finely, dice the cucumber into small cubes. Slice the spring onions into rings and chop the chives finely. Mix everything together in a large bowl.
Mixing dressing:
Combine spinach, basil, shallot, garlic, nuts, nutritional yeast, lime juice, olive oil, and rice vinegar in a blender. Puree until smooth. Add water as needed to achieve a creamy, yet still thick consistency. Season with salt and pepper to taste.
Bringing everything together:
Generously drizzle the dressing over the salad, mix well and let it sit for 10 minutes.
Serving:
Optionally top with some chopped nuts or tortilla chips for extra crunch.
Tip: The dressing can also be used as a dip or as a sauce for wraps and bowls!
